I’m not a big drinker or a party girl by any means, but I do enjoy creative cocktails on special occasions. Summertime is definitely a special occasion around here because I live in New England! Warm weather is rare and very cherished in these parts, so when summer finally arrives, we like to party hard.
Rather than joining my husband for a beer, I like to get creative in the kitchen and mix up unique cocktails with choice spirits like Pinnacle® Vodka.
My husband and I have enjoyed many different flavors of Pinnacle® Vodka over the years and we definitely have our favorites. During the summer, we love mixing up cool drinks with Whipped, Raspberry, Pineapple, Peach, Tropical Punch, Coconut or Citrus.
One of the drinks we came up with, we like to call “Pucker Up Sweet Summer.” This seasonal and region specific drink utilizes rhubarb that we grow in our own backyard.
Pucker Up Sweet Summer
- 4 oz. Pinnacle® Whipped Vodka
- Strawberry Rhubarb Syrup made with Strawberries, Rhubarb and Honey (instructions below)
- 1 cup frozen cherries (optional)
- 1 cup Orange Juice (or Coconut Water)
- Whipped Cream
Strawberry Rhubarb Syrup
Make a syrup by bringing 1 cup fresh strawberries, 2 rhubarb stalks that have been sliced and 1/2 cup of honey (or sugar) to a boil. Simmer on low heat, stirring occasionally for approx 20-30 minutes until it is thick and looks like syrup. You can then strain it or keep as-is and refrigerate or freeze it. I like to freeze the mixture in an ice cube tray so I can easily place 6-8 cubes into the blender with the rest of my ingredients.
Instructions
Put frozen strawberries and frozen cherries into you blender with 1 cup of orange juice. Add Strawberry Rhubarb Syrup to mixture. (If frozen in ice cube tray, add 6-8 ice cubes to blender. If fresh, add approx 1 cup to blender.) Pulse blender until mixture is well incorporated. Add additional frozen strawberries or cherries to thicken mixture or add a splash more orange juice to make it thinner. Once your drink is near the desired texture, add Pinnacle® Whipped Vodka.
Garnish with a dollop of whipped cream, a slice of fresh rhubarb and a fresh strawberry for a perfectly sweet and sour summer drink!
