My family loves meat. I mean looooooves meat. Especially BEEF! If my kids had their way, they would have steak for dinner every night.
So when we went grocery shopping last week, I picked up a piece of London Broil (Buy One Get One Free!) on sale at our local Shaws Supermarket. (We normally shop at Market Basket but haven’t been able to for the last 3 weeks, thanks to that whole debacle!)
While I prepared the vegetables, I handed the piece of meat to my husband and said “Here, do your thing…”
My husband can’t cook a damn thing. Seriously, if I get sick, the man eats peanut butter and jelly sandwiches and cereal. However, recently he has discovered that he has this hidden talent for grilling… Hmmm, must be all that testosterone or the ability to grill is just built right into the male DNA. Either way, the meat usually comes out so exceptional, I’m left stunned every single time.
This evening was no exception to that! I watched as my husband carted that big piece of meat out to the grill and braised it. After it was seared on all sides, he wrapped it in aluminum foil with 1/4 stick of butter, 1/4 cup of sliced onions and a generous amount of Weber Chicago Steak Seasoning. There are a number of ways to cook beef
Of course, it came out, perfect…
My husband was so impressed by this piece of meat, he posted to Facebook:
So, it seems I must be a grilling god. I cooked this thick steak on the grill, the same way I’ve cooked other pieces of meat to make them tender. I cooked it the way I like all steak, well done. As I’m eating it, I’m pleasantly surprised by how incredibly tender it is, considering it was a well done, very thick piece of meat. So I ask my wife “So what kind of cut is this?” She says, “It’s a London Broil”. [Jaw dropped] “This is a London BROIL?!”
So I cooked a thick London Broil, well done… and it came out tender! I’d bow to myself in honor of my grilling skills but I think I may break something in the attempt!
I served his lovely piece of beef with almond encrusted summer squash and dill roasted cauliflower with a generous helping of sauteed mushrooms and caramelized onions on top. Delish and very much paleo and gluten free!
This was a super easy, quick meal we just threw together and everything was so yummy! Not only that, there are 10 essential nutrients found in beef so it’s a healthy dinner too!

I don’t know what’s wrong with my husband but these chocolate covered caramelized onions were DELICIOUS and as you can see, it’s the first thing my kids went for…
