As many of you know, we are a mostly gluten-free household. My husband and guests of course are the exception to the rule, but myself and my three children eat gluten free. Two out of my 3 children have diagnosed food allergies that include wheat. I personally just prefer to eat a gluten free diet whenever possible just because I personally do not like how I feel after eating wheat. (Bloating, gas, lethargy, etc)
I am always on the prowl for gluten free items and I was delighted to discover gluten free Honey Bunches of Oats CHOCOLATE. Um, yes please!
Honey Bunches of Oats Chocolate is made from gluten free ingredients but be aware that it does contain corn. If you are looking for a gluten free, chocolatey treat, this will definitely hit the spot. Not only is this cereal great with milk or almond milk, you can also eat it mixed into yogurt. Each spoonful of Honey Bunches of Oats Chocolate gives you the perfect combination of delicious, crispy flakes mixed with crunchy bunches of goodness and REAL cocoa. What more could you ask for?!
I decided to make one of Honey Bunches of Oats recipes for Gluten Free Chocolate Coconut Macaroons for my mom’s birthday this week. She loves anything coconut so I knew these would be a hit!
Here is the recipe:
Gluten Free Chocolate Coconut Macaroons Recipe
Featuring Gluten-Free Honey Bunches of Oats

- 3 large egg whites
- 1/2 cup sugar
- 1/4 teaspoon salt
- 3 cups unsweetened shredded coconut
- 1 cup Honey Bunches of Oats Chocolate cereal, lightly crushed
- 1 cup semi-sweet chocolate chips
- Heat oven to 350 F.
- Line baking sheets with parchment paper; set aside.
- In a large bowl, whisk together egg whites, sugar and salt until very frothy. Fold in coconut and cereal until moistened.
- Drop mixture into 2 inch rounds on prepared baking sheets. Don’t press them together too tightly but you don’t want them to fall apart into granola.
- Bake until lightly golden, about 20 minutes. Transfer to wire rack to cool completely.
- Using a microwave safe bowl, melt chocolate chips in microwave in 30-second intervals until smooth. Dip bottom part of macaroons into melted chocolate and place them back on parchment paper lined cookie sheets. Cool in refrigerator for 30 minutes or until set.
In a large bowl, whisk together egg whites, sugar, and salt until frothy. Then fold in the shredded coconut and the lightly crushed cereal until moistened. It will barely stick together and should look something like this:
Drop the mixture with a spoon into 2 inch round blobs onto the parchment paper covered cookie sheets. Don’t press them together too tightly because you want your macarons to be light and fluffy, not dense. You also don’t want them to fall apart like granola, so be careful! They should look something like this:
Bake until lightly golden, which takes about 20 minutes. (Although the original recipe says 25 minutes – mine would have been very burnt if I left them in that long.)
Transfer to wire rack and let them cool completely.
Once the macaroons are completely cooled, use a microwave safe bowl to melt the chocolate chips in your microwave in 30-second intervals just until smooth. Dip the bottom part of the macaroons into the melted chocolate and place them back on parchment paper lined cookie sheets.
Cool in refrigerator for 30 minutes or until set. Then proceed to stop yourself from devouring all of the macaroons in one sitting. They are freaking delicious!
