What is Orzo?

If you have never heard of it, orzo is a short-cut pasta which is shaped like a long grain of rice. This white flour vegan pasta comes in several types and shapes, there is even a gluten free orzo which can also be an option for the recipe. Whatever the shape, this pasta is the perfect match for a flavor packed and fresh salad, even a vegan one. If you’re a fan of meal-prep, orzo is also a good option as you can cook it ahead and store it for a couple of days in your fridge until the moment of serving. 

Orzo salad is a typical Mediterranean delight and, as the main title goes, this is just one of the many healthy options this colorful and healthy cuisine has to offer. Like any salad, it can come together in just a few minutes and this one in particular goes with almost any other dish you may want: chicken, meat or you can even have it as the main dish. 

Next you’ll find a list of must-have ingredients, but don’t be afraid of trying it out and making your own version of it by adding many other veggies and seasonings.

Orzo Salad and Dressing

Ingredients:

  • 2 cups of orzo.
  • 1 cup of sliced cucumber.
  • 1 cup of cherry tomatoes.
  • ½ cup of chopped green onions.
  • ½ cup of chopped bell pepper.
  • ½ cup of sliced olives.
  • ½ cup of pine nuts.
  • ½ cup of feta cheese
  • ½ cup of chopped parsley.
  • ½ cup of chopped dill.
  • 1 tbsp of salt.
  • ¼ tbsp of black pepper.
  • 4 tbsp of fresh lemon juice.
  • ¼ cup of extra virgin olive oil.
  • 1 clove of garlic.
  • ½ tbsp of oregano flavor.
  • Feta cheese.

Preparation – Salad:

  1. In a medium size pot, put water to a boil and pour two cups of orzo. Let it cook following the instructions in the package.
  2. Take the cherry tomatoes and cut them in half to bring some juice to the salad. Place them in a big bowl.
  3. Take the bell pepper, cut around the core, slice it up and chop it in small cubes. Place that together with the tomatoes.
  4. Take the orzo out of the heat, drain it and run it under water one time. This will prevent the past from clumping together. Let it cool down a little.
  5. Take two or three green onions and chop them, use both the green and white part. Do the same with the cucumber.
  6. Add both chopped veggies to the bowl.
  7. If orzo is cool enough, incorpore it as well.
  8. Now take the fresh parsley and chop it down. You can trim part of the stem, but not all of it as it contains part of the flavor.
  9. As for the dill, cut the stem off and add the chopped leaves to the bowl.
  10. Now add the sliced olives and pine nuts to the mix.
  11. Cut the feta cheese in small cubes, add it and mix all the ingredients together.

Preparation – Dressing:

  1. Squeeze the juice of two fresh lemons and mix that with ¼ cup of extra virgin olive oil. You can also zest the lemon.
  2. Use a clove of garlic and chop it really small. Add it to the mix.
  3. Season the juice with some oregano, add salt and black pepper at taste. 
  4. Whisk and pour the mix all over the salad.

Pro tips

  • You can use English cucumbers which are seedless and sweeter. If you cook this in advance, leave them for the last minute before serving as they are a watery vegetable.
  • No need to let the orzo to reach room temperature. The warmth will allow it to absorb all the taste coming from the rest of the ingredients.
  • If you want to go all the way down the vegan road, you can use tofu-based feta cheese.
  • As a main dish, this recipe serves four people. As a side dish, it could serve up to eight people.

All 4 of my children’s first taste of food was avocado and sweet potatoes that I introduced when they were about 9-12 months old. What Is Raised Real?

Alright, so Raised Real is basically the best thing to ever happen to busy parents. It’s a baby meal delivery service that arrives at your doorstep with 20 flash frozen, organically-sourced, little meals that are developed by a nutritionist, and curated especially for baby’s growth and development. The box of baby meals are shipped right to your doorstep every 2 weeks but you can change the frequency of deliveries to every 4 or 6 weeks, depending on how much your baby eats.

When your big box of baby meals arrive, just chuck them all into your freezer! When your baby is ready to eat, just pull out a package, steam it for 5-10 mins, sauté it in a pan, or microwave it for 15-30 seconds. It’s that easy!

Best of all, you get to decide how you want to serve it. You can easily puree it once it’s steamed, mash it lightly or leave it whole as finger food for older, more dexterous babies.

Since my baby seems to be a fan of beans, I tried out the meal with black beans in it first. The meal boasted red peppers, black beans, cumin, cilantro, and avocado oil. Each meal comes with a little meal card that tells you how to food is helping your developing baby and the nutrition facts. They also tell you how much water to add if you are using a Beaba Babycook (a baby food steamer which they used to include free with your first box of food when you subscribe, but apparently, do not anymore).

Since I didn’t have a Beaba, and the whole point of a meal delivery service for your baby is simplicity, I decided to try preparing the food in the microwave before pulling out a pot and having one more thing on the stove.

I poured 1/4 of the bag into a microwaveable glass jar, added a splash of water and microwaved it for 15 seconds. It came out perfect! What a relief to have a nutritious, organic meal ready to serve to my baby in seconds with little to no thought. Just my kind of thing!

The beans were soft enough for my baby to pick up with his expert pincer grasp and chew with his 4 little teeth. He’s also enjoying trying to feed himself with his new Beaba First Stage Silicone Spoon so I poured the food into his bblüv Miäm silicone plate so he could just have at it! We’re not afraid of baby led weaning in this house.

None of Raised Real’s meals contain tree nuts, peanuts, shellfish, fish, wheat, dairy, soy, or egg, although some of the meals contain coconut. Most people who are allergic to tree nuts can safely eat coconut though.

Worth it or not?

With anywhere from 6-9 people to cook dinner for every night, Raised Real has made preparing food for my baby simple and brainless. I can quickly prepare food for my youngest in less than 10 minutes without using any brain power, which on most days, I am short on.

While some might argue that it’s easier and cheaper to just mash or puree up whatever the adults are eating and give it to the baby, that HIGHLY depends on what you are eating! If you are a typical American, what you are serving at the dinner table likely has added sugar, salt and even things like preservatives that your baby doesn’t need. If you grow your own food in your backyard and eat only organically, then yes, it might be easier and cheaper for you to make your own baby food if you have time for that. For those of you that can’t buy all your food at Whole Foods or grow it all in your backyard, Raised Real is a real-life solution for busy parents that want the best for their baby. Totally worth it in my opinion.
